My Arroz Mamposteao (Healthy Rican Style)
Arroz Mamposteao is a Puerto Rican favorite. It's made with leftover white rice and bean stew. It's almost like a Puerto Rican version of fried rice, and it's absolutely delicious. A great way to repurpose leftovers!
Cuisine Latin, Puerto Rican
- 2 cups leftover white rice
- 1 cup leftover bean stew
- 1 tbsp avocado oil
- 1/4 cup onions diced
- 1/4 cup bell peppers diced
- 1/4 cup cilantro chopped
- 1/2 cup ripe cooked plantain cubed
- 1/4 cup ham diced
- In a large pan, add a bit of oil and stir fry the garlic, onions, bell peppers, cilantro, plantains and ham, on high heat. Cook for 1-2 minutes until they start to brown.
- Add the rice and beans, and mix well.
- Reduce heat, cover and allow all the ingredients to warm up and bring the flavors all together.
- After 5 minutes, mix well and check on the flavor. At this point, decide if any other ingredients or seasonings are needed.
- After it's warm, serve and top with fresh cilantro.
- Enjoy with a slice of avocado and/or side salad.
