Latin-Style Chicken Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 bulb onion chopped
  • 2 cloves garlic minced
  • 2 pcs medium carrots sliced
  • 1 pc red bell pepper chopped
  • 2 cups cooked, shredded chicken from rotisserie or poached
  • 4 cups chicken broth
  • 1 cup tomatoes diced
  • 1 tsp Healthy Rican Sazon
  • 1 tbsp Healthy Rican Sofrito
  • salt and pepper to taste
  • 1 cup fresh cilantro chopped
  • lime wedges for serving

Instructions
 

  • Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the onion and cook until translucent. Stir in garlic and cook for another minute.
  • Cook Vegetables: Add carrots and bell pepper. Cook for 5 minutes until vegetables start to soften.
  • Add Broth and Chicken: Stir in the chicken broth, shredded chicken, corn, diced tomatoes, and seasonings. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  • Finish and Serve: Stir in the chopped cilantro and adjust seasoning. Serve with lime wedges on the side.
