Here are some typical dishes that showcase the rich tapestry of flavors: 

1. Arroz con Pollo (Chicken with Rice)A delicious and hearty Latin American dish featuring tender chicken pieces cooked with seasoned rice, colorful bell peppers, peas, and a savory tomato-based sauce.

This dish combines Spanish and indigenous influences. It features seasoned chicken cooked with rice, vegetables, and spices such as saffron. The use of rice and spices reflects the Spanish colonization, while the cooking method and ingredients like peppers and tomatoes highlight indigenous roots.

2. Mofongo

Originating from Puerto Rico, mofongo is a dish made from mashed plantains combined with garlic, pork cracklings (chicharrones), and broth. It is influenced by African cooking techniques and the use of plantains, a staple ingredient in Caribbean cuisine.

3. Feijoada

Feijoada is a hearty Brazilian stew made with black beans and various cuts of pork like sausages, bacon, and pork ribs. This dish has its roots in Portuguese cuisine but has evolved in Brazil to incorporate local ingredients and techniques.

4. Ropa Vieja

Ropa Vieja, meaning “old clothes” in Spanish, is a Cuban dish made with shredded beef cooked in a tomato-based sauce with onions, peppers, and spices. Mofongo: Healthy Rican Style

A traditional Puerto Rican dish presented in a wooden mortar and pestle (pilon)Mofongo is a very popular dish in Puerto Rico that is made with green plantains. Plantains grow in the tropics, and are within the banana family (see image below). Some grocery stores in the states carry plantains, especially if there is a Latin community in the area. Mofongo is a very versatile dish, you can enjoy it stuffed, or as a side dish.​​ I give it my healthy twist by frying in refined coconut oil or avocado oil, but you can fry in any oil you wish. Plantains are also super healthy. Calorie wise, they are similar to a potato, but they are a rich source of fiber, vitamins A, C, B-6, magnesium and potassium. They are also a great carb alternative in a Paleo Diet, and are Vegan friendly too.


(2-3 servings​)

  • 3 large green plantains (platano macho)
  • Refined coconut oil, avocado oil, or oil of choice (for frying)
  • 1 or 2 garlic cloves
  • Optional: pork cracklings (chicharrón) or cooked bacon if desired
  • Extra virgin olive oil or butter
  • Salt and pepper or Healthy Rican Adobo to taste
  • You’ll need a mortar and pestle (aka pilon). Note: You can find the one in the picture above on Amazon here.


  • Peel the plantain using a knife. (It’s easier to peel if you do it under water)

The peel may have black or brown spots, indicating ripeness.

  • Cut the plantain in 1-inch pieces. (see image below)

  • In a small frying pan, add about 1 cup of oil. Heat the oil to medium heat.
  • Fry the plantain pieces on both sides. Plantains should look golden yellow/brown and cooked until soft enough to stick a fork in them easily. (see image below)

  • For an even healthier mofongo, boil the plantains until soft, instead of frying them. A similar technique is used in the Dominican Republic and the dish is known as mangu. While the technique is different, when adding the garlic, butter and chicharrón, the dishes are remarkably similar in flavor.
  • Remove plantains from heat (or drain if you boil them).
  • In a mortar and pestle (pilon) mince 1/2 or 1 small garlic clove.
  • Mash the plantains a little at a time. Start mashing the plantain while mixing it with the garlic, add olive oil or butter if the plantain looks dry and not sticking together. Also add salt and pepper (or adobo) to taste and chicharrón if using.
  • Repeat with the rest of the plantains. ​
  • The plantains should be soft and consistent enough that you can shape it into a ball or small balls. ​If the mofongo looks to dry, try adding broth a little bit at a time until desired consistency is achieved. 
  • Typically it’s served with a bowl of broth on the side.
  • Mofongo can be stuffed or served as a side dish with meats, fish, seafood, and more. 
  • Note: You can also use ripe plantains instead or in addition to the green plantains (for a sweeter mofongo).​
